Milling is an essential process before each brew, so that the necessary sugars can be extracted from the husks of the grains added to the tanks… all pretty boring, technical stuff. The fun part of this process is that it often leaves our brewer’s assistant, Cain, covered head to toe in a fine sediment of ‘dust’, giving him a pale appearance, alike that of having just seen a Ghost. This comical look, and our basic sense of humour, provided us the inspiration to make a beer with the palest, hazy appearance as possible, in his honour. Using hop variety ‘El Dorado’, we have created a thick, pillowy and soft Hazy IPA, with hints of pineapple, mango and a resinous backend. ‘Ghost Dust’ is hauntingly good.
